Easy as salmon - So fresh and delicious!

This is my staple go-to dinner once a week. You can't go wrong! What I love about salmon is that its minimal effort, tastes phenomenal, and you can be in and out of the kitchen in under 15mins. Too easy!


Recipe For: 2

Time: 15mins


Ingredients:

2 Salmon steak fillets deboned preferably

2 tsp Fresh dill chopped up

1 lemon

Sea Salt

Pepper

Any greens you like: Asparagus, Snow-peas, Brocollini

Cous Cous

Chicken stock

Avocado


Method

Salmon

1. Preheat oven to 150c.

2. Line your oven tray with baking paper and place the salmon fillets ontop.

3. Drizzle half a lemon over fillets - a good amount so the fillets are glistening.

4. Add your freshly chopped dill, sea salt and peper all over the fillets to your liking.

5. Place in the oven to cook for 10-15mins. You'll know when it's ready when the corners are just turning golden brown!


Greens and Cous Cous

1. Meanwhile get your saucepan on the stove, heat up with some olive oil.

2. While this is heating up, chuck a jug of water on boil.

3. In a container add 200g of cous cous and add your chicken stock.

4. Chuck your greens in the sauce pan and cook for 3-4mins. Set aside and ensure the veges are still green and crispy. Season with a little salt if you like.

5. Now fill your container or bowl with the cous cous and add your hot water. The hot water should be at least 1.5cm above the cous cous. Cover and rest for 5mins.


Finishing Touches

Add your cous cous on the plate, along with your salmon steak and fresh greens. Add a ripe avo on the side - I like to add 1/4 - 1/2 an avo per person depending on how hungry we are! Drizzle more lemon, so it soaks all into this plate full of goodness.
